#1 Clam Chowder of Awesomeness

Post by rhoenix »

Partially because I begged B4UTRUST for a good clam chowder recipe and then flaked on him for this one I used, and partially because this recipe is better by far than most others I've had, here you go:

And as an aside, this kind of clam chowder demands cornbread. If you use crackers, the clams will all come to life and throw up in your lap.

Ingredients needed:
1 large carrot, chopped
2 stalks celery, chopped
1 large can of clams (or two small cans of clams)
1 bottle of clam juice
2 cans chicken broth
1 small container heavy whipping cream
2-3 cloves garlic, minced
1 yellow onion, chopped
salt
pepper
old bay seasoning
1 stick of butter
2 yukon gold potatoes, peeled and chopped
white pepper
1/4 cup unbleached flour

Instructions:
- Take a soup pot or other large and deep pan, set on low heat.
- Drop entire stick of butter in there, along with your 1/4 cup flour.
- Mix up both until the mixture bubbles a tiny bit.
- Add in the onion, carrot, celery, garlic, 1/4 cup clam juice, and both cans of chicken broth. Add in seasonings as well at this point - about a teaspoon of old bay seasoning, a teaspoon of white pepper, and salt/black pepper to taste.
- Increase heat to medium low, and let it sit for about 10 minutes.
- Add in potatoes and the whole container of whipping cream.
- Let it cook covered until the potatoes are tender (took me about 15-20 minutes).
- Add the clams, with juice.
- Let cook for 5-10 more minutes, until it threatens to boil.
- Serve (with cornbread - this is important).

Now, this ended up being a bit more saucy than the kind of this recipe I had before - perhaps just more flour is needed at the beginning, I'm not sure. In any case, it tasted awesome.

How many people will this serve? Also you realize now someone must produce a recipe for cornbread. I think it should be you.

I never pay any attention to servings, since I always eat more than one piddly-ass serving. However, that said, it fed four people two good-sized bowls each on Christmas Eve, with some left over to save.

Also, I should mention - you may wish to have some unbleached flour handy - mine ended up a bit more liquid than I wanted. It was still excellent, and the second-best I've ever had, don't get me wrong.

The best I've ever had was when the friend of mine, the one who gave this recipe to me to begin with, made this clam chowder, and it was thicker.

Meh. I just used one of the ready-mix boxes from the store, without a from-scratch recipe. I'm a Philistine, I know.
