One of my dad's favorites:
Ingredients:
2 C Elbow Macaroni
1 pkg Polska Kielbasa
1 can Pinto Beans
1 can Diced Tomatos (flavored or not)
salt & pepper
Tools:
2 qt pot
colander (optional)
med-large skillet (optional - see notes)
sharp knife
stirring Spoon
Directions:
Prepare macaroni according to directions on package. Slice kielbasa into 1/2" slices crossways. Fry kielbasa in skillet. Drain pasta and return to stove. Add Diced tomatoes, beans, and kielbasa. Mix. Warm over med heat, about 5-8 minutes, until beans and tomatoes are hot.
Serves 6 - 8.
Notes:
This is one of those recipes that allows for a bit of creativity in your ingredients. I've made it with flavored diced tomatoes, plain diced tomatoes, elbow macaroni, penne pasta, smoked sausage, polska kielbasa, lite polska kielbasa (my fav!), pinto beans, brown beans... you get the picture. If you don't want to, the kielbasa doesn't have to be fried, since it is already cooked. However, I feel that frying it brings out the flavor. My father doesn't like tomatoes, so when he makes this he purees the tomatoes before adding them Also, I don't like the grainy quality that the beans add to the mix, so I rinse them before adding them.
