Be interesting to see what Nal does. Conventionally speaking the sheer number of enemy spellcasters means magically speaking he's on the defensive. But this is Nal, he thinks the best defense is ripping out your enemies eyes and chopping off their hands... Which I gotta admit is a pretty good defense.

Me? I would open up with something aimed at killing or weakening their horses.

Although adding a nice little fast-growing naturally toxic weed into the grazing lands would be a good start. Especially if it's a northern weed the southerners have never experienced. Milkweed, for example?

Very nasty little suggestion there. You'd need something that couldn't be 'easily cured' via Neutralize Poison or Remove Curse
Simple enough. Don't curse the horses. Curse the flies that bite the horses. Make the water bad to drink, just add salt. Twist the grass, don't make it poisonous, make it addictive and hallucinogenic. Ever seen a horse go through withdrawal?
