There are certain Gazelles that when confronted by a predator don't run away as fast as they can but instead make high and long jumps actually attracting attention. From what I've read the idea behind this behavior is to show how strong and fit they are, basically saying "Look at how bad ass I am, you don't want to waste the energy trying to catch me."

The thought occurs, how would this instinct and behavior be expressed in a sapient species?

In its most basic form chest beating, brandishing weapons, howling [insert war cry here], and rearing up. Puffing yourself up to look badass is a fairly widespread behavior, even among species that don't come with fur that can stand on end or extendable frills.
